Hosts
Eth gets a kitchen right by learning from someone who eats from it. A host is that person for their cuisine.
What a host does
- Decides what Eth should know about the plates of their kitchen: the names, the sides a plate comes with, the portions a home serves, the meals of the day.
- Reviews what the houses teach Eth about those plates before any of it becomes the catalog's default.
- Reads Eth's lines in their language and fixes what sounds wrong at a family table.
- Is named for it. This page says who shaped each kitchen.
Hosts are people, not titles. There can be more than one for a kitchen, and a host's say is over their kitchen's plates, never over anyone's log.

EthnoCAL is designed and built by Jorge Martinez, a product designer from Lima who lives in New York. The Peruvian kitchen Eth starts from is his: the plates, the portions and the way a day is divided into desayuno, almuerzo, lonche and cena.
Your kitchen isn't here yet
Lebanese, Filipino, Nigerian, Mexican, Vietnamese, Indian: Eth already knows some of the plates and none of them well enough. If you cook from one of these kitchens, or one Eth has never heard of, write to us. Tell us where you're from and what a weekday lunch looks like at your table.
